Thai Sweet Chili Sauce
This sauce pairs perfectly with anything from Khao Mun Gai, to fried eggs. It's sweet, very spicy, and only takes 30 minutes to make.

P.S. this sauce will last in your fridge for months if kept in an air tight container.
Ingredients:

15 cloves garlic

1 cup Thai Red Chilis

1 1/2 cups white sugar

1 cup light corn syrup

1/2 cup distilled white vinegar

2 1/2 tbsp kosher salt

1/4 cup water

Instructions:
1. Using a food processor, pulse garlic and chilis until they are finely chopped.
2. In a saucepan combine the sugar, corn syrup, and water. Bring to aboil while stirring frequently.
3. Reduce heat, sirring frequently until sauce coats the back of a spoon, 15-20 minutes.
4. Stir in garlic, chilies, vinegar, and kosher salt.
5. Reduce the heat and stir consistently for 7 minutes.
6. Let sauce cool, and pour into an air-tight container.
