STEAK FRITES 

It's steak and fries, that's all I need to say

Ingredients:


 

  • kosher salt, to taste

  • 2 russet potatoes

  • 4 cups vegetable oil

  • Kosher salt, to taste

        _

  • 1lb ribeye

  • 2 sprigs rosemary

  • 4 tbsp olive oil

  • 2 sprigs thyme

  • 3 cloves crushed garlic

  • 4 tbsp butter

  • salt, to taste

  • black pepper, to taste

Instructions:


 

1. Using the setting on your mandelin, or using a knife, cut thin strips of potato. Place in an ice bath.

2. In a large pot bring 4 cups of oil to 375F. Slowly add in the fries, making sure to shake off excess water.

3. Fry until crispy, toss in salt and set aside.

4. Make sure your steak is at room temperature. Season both sides thoroughly with salt and pepper.

5. In a pan, preferably cast-iron, put 2 tbsp olive oil. Once hot add your steak. Sear, and take out of the pan.

6. Add butter, rosemary, thyme and garlic to the pan. Once butter is melted add back your steak. Continuously baste for 4-5 minutes or until medium rare.

7. Set aside and rest for minimum 10 minutes.

8. For your sauce, finely chop all of your herbs and combine the ingredients, seasoning to taste.

9. Plate your steak frites and enjoy!
