MISO GLAZED SWEET POTATOES

Sweet, acidic, umami. Perfect enjoyed alongside a nice cut of steak or pork.

Ingredients:


 

  • 1lb garnet sweet potatoes

  • 2tbsp olive oil

  • ¼ cup white miso paste

  • 1tsp brown sugar

  • ¼ tsp kosher salt

  • Juice of half a lemon

  • ¼ tsp lemon zest

  • 1 small apricot

  • Chives, cut small

Instructions:


 

1. Set the oven to 350F. Cut sweet potatoes into quarters.

2. In a bowl, mix together oil, miso paste, sugar, salt and lemon zest, until smooth.

3. Using a small knife or fork, poke 3-4 small holes into each sliver of sweet potato.

4. Baste mixture onto sweet potatoes, evenly. Roast for 20 minutes.

5. Mix together lemon juice and the apricot, diced.

6. Add the lemon juice, apricot mixture onto the sweet potatoes. Roast for 20 minutes, or until tender.

7. Let rest for 3-5 minutes. Top with chives and Enjoy!
