MEATBALLS, MARINARA, AND EGGS

This is one of my favorite breakfasts. It's best served alongside some toasted ciabatta and salted butter.

What Snookie Uses:


 

Ingredients:


 

  • 3 tbsp extra-virgin olive oil

  • 1lb 80-20 ground beef

  • 1 clove of garlic, minced

  • 1/4 yellow onion, diced

  • 1 1/2tsp kosher salt

  • 2 tbsp breadcrumbs

  • 2 tbsp beef stock

  • 1 tbsp oregano

  • 1 tbsp red chili flakes

  • 2 tbsp grated parmesan​

                      -

  • 1 32-oz can peeled San Marzano tomatoes (salt to taste)

  • 4-5 eggs

  • fresh mozzarella 

  • fresh basil

Instructions:


 

1. Start by combining all of the meatball ingredients and rolling them int 1" wide balls.

2. Rest in the fridge for minimum of 30 minutes.

3. On medium heat add your olive oil and sear all sides of your meatballs.

4. Meanwhile, blend together a can of San Marzano tomatoes and season to taste with salt.

5. Remove meatballs from pan and add marinara, making sure to scrape of the browned bits of meat stuck to the bottom of the pan (it adds flavor).

6. Add meatballs back to pan and cook on medium heat for 5 minutes.

7. Crack eggs into pan and add globs of mozzarella cheese throughout.

8. Cover to steam eggs, roughly 2 minutes. 

9. Top with fresh basil and Enjoy!
