GARLIC CONFIT TOAST
Confit means to preserve, meaning this dish can last a while if you take care of it properly. This is the easiest recipe that I have, all it requires is time and patience, and you end up with a sweet, umami product. This is perfect served alongside my Moules au cidre recipe, but also goes great with a variety of dishes.
Ingredients:

40-50 cloves of garlic

2 cups extra-virgin olive oil

1 baguette

1 bunch chives

Instructions:
1. In a small sauce pan, add the garlic cloves and extra-virgin olive oil.
2. Set the burner stove on low heat and let cook for 1 1/2-2 hours.
3. Once finished, set aside and left rest in oil for a minimum of 30 minutes.
4. Remove the garlic and blend using an immersion blender. You will be left with a smooth garlic paste.
5 Strain the oil through a fine mesh sieve and save for later.
6. Spread garlic confit on toasted baguette and top with finely cut chives. Enjoy!
