FRITTO MISTO

This is one of the things I ate the most while in Italy. Fresh squid, eggplant, sweet potatoes, etc. deep fried in a thin crispy batter. What's not to love!

Ingredients:


 

  • 1/2lb squid, fresh

  • 1 sweet potato, thinly sliced

  • 1 eggplant, thinly sliced

  • 4 cups extra-virgin olive oil

  • 1/2 tsp baking powder

  • 1/3 cup corn starch

  • 1-1/4 cup AP Flour

  • 1/2 tsp paprika

  • 1/2 tsp black pepper

  • 1/2 cup whole milk

  • 1/2 tsp sea salt

  • Fresh Basil

  • Lemon, cut into wedges

Instructions:


 

1. Start by washing your squid thoroughly.

2. When cutting the body of the squid, cut 1" rings and place in a bowl combined with milk and sea salt. Marinate for 30 minutes.

3. In a bowl combine all of the dry ingredients. Toss the pieces of squid, eggplant and sweet potato in the seasoning mixture until coated.

4. Place the ingredients in a fine mesh sieve and shake off all loose flour.

5. Bring your olive oil to 350F. Once hot, slowly place pieces of squid, eggplant and sweet potato into the oil. Cook until golden brown, typically 2-3 minutes.

6. Once cooked place on a wire mesh rack and let cool.

7. Serve with fresh basil and lemon. Enjoy!
