Cagliata Fresca

Ricotta might be one of the easiest things you can make from  scratch. The whole process takes less than 25 minutes, requires no technical skill and leaves you with a salty cheese. Perfect for pasta's, sandwiches and dips.

Ingredients:


 

  • 4 cups whole milk

  • 3tbsp fresh lemon juice

  • ½ tsp kosher salt

Instructions:


 

1. In a large pot add the milk and over medium-low heat bring to a simmer.

2. Once simmering add the lemon juice and salt until temperature reaches 175F.

3. Take off heat and mix for 5 minutes. Let rest for 5 minutes.

4. Using a strainer, let the ricotta strain for 10 minutes.

5. Remove from cheese cloth. Serve with bread, pasta, or whatever else you would like. Enjoy!

 

P.S. This should last in the fridge for 5-6 days in an air tight container.
