CRAB FRIED RICE
Crab fried rice is a classic, simple, yet elegant dish that can be enjoyed by anyone that wants a quick meal. It doesn't take long to make but packs a lot of flavor. I recommend serving with pickled ginger and extra fish sauce on the side.
Ingredients:

2 cups Jasmine Rice (day old)

1 tbsp light soy sauce

1/2 tsp black pepper

1/4 tsp white pepper

1/4 cup vegetable oil

5 cloves garlic, chopped

1/2 yellow onion
-
12 scallions, chopped
-
1 cup crab meat
-
1 tsp kosher salt

1 tsp light brown sugar

1 tbsp fish sauce

4 large eggs

Instructions:
1. Mix together the day old rice, soy sauce, pepper, salt, sugar, and fish sauce.
2. In a large pan or wok, on high heat, add oil and scramble eggs.
3. Add the onion and garlic, cook for 1-2 minutes or until translucent.
4. Add the rice mixture and continue cooking for 4 minutes.
5. Add the scallions and crab, cooking for one more minute.
6. Serve with more crab and scallions on top, enjoy!
