DAD'S BIRTHDAY WAFFLES
My dad's waffles have been apart of breakfast's since I was little. Whether it was for sleepovers, birthday's or casual Sunday mornings my dad was always hard at work making waffles so that everyone was fed. Recently, I made these for Ilayda's 21st birthday and she enjoyed them so much. I hope you enjoy a little taste of my childhood.
Ingredients:

2 eggs

1-3/4 cup whole milk

1/2 cup neutral oil

3 tbsp white sugar

2 tsp vanilla extract

2 cups AP flour

4 tsp baking powder

1/4 confectioner sugar

1 cup heavy whipping cream

Instructions:
1. Separate egg whites from egg yolks
2. Beat egg whites for 3-4 minutes, until peaks form
3. Combine egg yolks, milk, and vanilla extract until fully combined.
4. Mix dry ingredients
5. Add dry ingredients to wet ingredients and mix.
6. Fold egg white into mixture until combined.
7. For the whipped cream, whip the cream until bubbles begin to heavily form, typically 2 minutes.
8. Once bubbles have formed, add sugar and whip until peaks have formed.
9. Add your waffle batter to your waffle maker, cook and enjoy!
